Jumping Shrimp

I ordered the jumping shrimp at Shun because I thought they were similar to Vietnamese "jumping squid", which is a spicy squid salad. Vietnamese =! Japanese, of course.

Turns out that in sushi terms, "jumping" means they're live shrimp. They were brought out of the bin, their feelers wriggling around, and the sushi chef twisted off the heads. Then the tails were prepared as sushi. I pretty much had to eat them at that point, since they gave their shrimpy little lives in front of me. They were juicy and fresh, and better than cooked shrimp. Not spicy.

The heads vanished into the kitchen. Antennae still wriggling.

I ate some other sushi and oshinko, and the jumping shrimp heads returned! Cooked in a super-light tempura. Fantastic.

(Oh, and bonus points to Shun for telling me WHY I can't get uni this time of year. They're spawning and out of season all summer.)

Oh man, Chris and I did sushi happy hour at Umi on Wednesday and I said to him then "Man I could really go for some fried shrimp heads!" Seriously. I'm so jealous that you got to satisfy *my* craving!

Uni, on the other hand, you can keep. I'm not fond of the urchin.

You know, I totally understand this and at the same time, I admit that the whole incident gives me pause. Not in a bad way. Just in a "Wow, there it is—critters die so I can eat them" kind of way. :-) I haven't had that experience since editrx stood over a pot of boiling water with a lobster in each hand and said "Go to God" as she dropped them in, first one then the other.
